The Italy-America Chamber of Commerce has organised three masterclasses to train and educate personnel working in the mass retail industry, as well as those working in Speciality Stores, as regards PDO and PGI products.

The masterclasses, which took place at the headquarters of Kowalski’s Markets (Minneapolis, 12 February), Di Buno Bros.  (Philadelphia, 12 March) and DeCicco & Sons (Armonk, 14 March), were dedicated to sector professionals and intended to explain the meaning and distinctive features of PDO and PGI certifications, thereby allowing for the recognition of authentic Italian products.

More specifically, the participants discovered the characteristics of the following:  Prosciutto di Parma PDO, Speck Alto Adige PGI, Mortadella Bologna PGI, Grana Padano PDO, Parmigiano Reggiano PDO, Basilico Genovese PDO, Olio Extra Vergine di Oliva Riviera Ligure PDO and Olio Extra Vergine di Oliva Val di Mazara PDO, with a special focus on the provenance, production processes and organoleptic qualities of the above, in addition to their correct accompaniments.
